Anyone who turns down a potentially lucrative Tesco contract immediately goes down in consumer goods history (and gets a lot of press into the bargain – just ask Tyrrells founder Will Chase). And that’s exactly what the Ballards did in 2013, instead choosing to focus on Waitrose, Ocado and the indies. the first ‘Muddy Boots Modern Meat Shop’ is opening in Crouch End and another 10 are planned to open before 2020.
This entrepreneurial couple are also steadily extending their reach in the premium meat category, with bang-on-trend quality burgers, meatloaf and meatballs. Their rise has been steady since quitting their jobs to set up the business in December 2008. So far, the moves they’ve made carry all the hallmarks of a top – and in the future, far bigger – brand. Miranda has also had her first two cookbooks published and the third, with the same publisher, launches in October 2015.

Good Meat Is A Choice
Six years ago, Miranda Ballard and her husband Roland left their jobs in London to return to their Worcestershire roots and follow their dream of starting a food business. They set out to prove it is possible to make a better burger using ethically farmed British-reared Aberdeen Angus beef. Their success led the now established burgermeisters to increase their range to include lamb burgers, meatloaf and meatballs with chorizo (a delicious favourite). This month they’ve taken a whole new leap of faith. Miranda: “I was working as PA to Sir David Frost and my husband Ro had a job at Working Title Films.
We started to wonder what was next for us and, both being children of self-employed parents, we didn’t think it odd to set up a business and work together. We wanted to flip everything upside down somehow, so we had a look at what we could do and conducted some research into meat farming, including one highly romantic weekend when Ro whisked me off to an abattoir to learn about slaughtering…! Plans started to come together when Ro’s dad agreed to sell us some of his herd of cattle. Less than a month after setting up in business, we were running a market stall – we took £248 that day, which was amazing – we’d never felt richer!” It can be extraordinarily brutal and you can’t help but take the blows personally because the business is your ‘baby’.
But the upside is the high you get when you have a win, like getting a new line listed in Waitrose or seeing someone with your product in their trolley. We’ve just opened our own shop, Muddy Boots, in North London’s Crouch End. We’re excited by high street retail. Our approach is modern, combining recipe suggestions on iPads with tributes to more traditional ideas like the option to run a tab. It’s a modern meat shop that offers its own experience – people are able to chat to us, buy our meat and even stay to enjoy a glass of wine and a charcuterie board in the evening.”
